Noodel Kugel (Pudding, Casserole)

I love this dish as either a side dish, stand-alone meal, or dessert!
This dish can be made in SO MANY ways! You can exchange the type of noodles, types of cheese.
You can substitute for the raisins – apricot preserves for instance, etc.

First I prepare a 12 ounce package of wide egg-noodles, drain, then toss with about a half-stick of butter and let cool.
Preheat oven to 350ºF.

Then I mix:
4 Eggs
16-oz Ricotta Cheese
8-oz Sour Cream
4-oz Cream Cheese
¼-Cup whipping cream (can use Half-&-Half or just milk)
¼-Cup Raisins (or more….1/3 or ½ Cup)
½-Cup brown sugar
1-Teaspoon salt
½-Teaspoon Vanilla
3 or 4 Dashes of cinnamon
Then sprinkle a little more cinnamon over top of mixture once you put it in the baking dish.

Add the noodles and mix gently until well combined with the mixture.
Grease a 13″x9″x2″ (or other suitable size baking dish) and pour in mixture.

Bake for 1 hour (or until done – top should be slightly brown on tips of noodles, center should be firm)

Here’s what mine looked like the other day – I cut into six portions, eat one, and freeze the others individually!
